Next, use your fingers or the seafood shears to split the shell along the back of the shrimp. Peel the shell off, starting from the head end down to the tail. You can leave the tail on if you want – it looks pretty cool on a plate.
Now, it’s time to devein the shrimp. The vein is that dark line running along the back of the shrimp. It’s basically the shrimp’s digestive tract, and while it’s not harmful to eat, it can have a bit of a gritty texture. To devein, use the tip of your paring knife to make a shallow cut along the back of the shrimp, then use the knife to lift out the vein. You can rinse the shrimp under cold water to make sure it’s clean.
Filleting the Shrimp
Once your shrimp is shelled and deveined, it’s time to fillet it. Lay the shrimp flat on your cutting board, with the back side up. Take your sharp paring knife and insert it at one end of the shrimp, close to the edge. Then, carefully slice through the shrimp horizontally, working your way to the other end. Try to keep the cut as even as possible.
You’ll end up with two thin fillets from each shrimp. If you’re using larger shrimp, you might even be able to get a few more fillets by slicing them a bit thinner. Just be careful not to cut yourself – that’s no fun!
Preparing the Fillets for Cooking
After filleting, you can pat the shrimp fillets dry with a paper towel. This helps to get rid of any excess moisture, which can prevent the fillets from getting a nice, crispy sear when you cook them.
Now, it’s time to season the fillets. You can keep it simple with just a little salt, pepper, and a squeeze of lemon juice. Cook the fillets for about 1 – 2 minutes on each side, or until they turn pink and opaque. You’ll know they’re done when they’re firm to the touch but still tender. Be careful not to overcook them, or they’ll turn rubbery.
Baking
Baking is another great option. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat. Place the seasoned shrimp fillets on the baking sheet in a single layer.
Drizzle a little bit of oil over the fillets, and then bake them for about 8 – 10 minutes, or until they’re cooked through. You can flip them over halfway through the cooking time to make sure they cook evenly.
Grilling
If you’re in the mood for a smoky flavor, grilling is the way to go. Preheat your grill to medium – high heat. Brush the shrimp fillets with a little bit of oil to prevent them from sticking to the grill.
Place the fillets on the grill and cook them for about 1 – 2 minutes on each side, just like when pan – frying. Keep an eye on them, as they can cook quickly on the grill.
Serving Suggestions
Once your shrimp fillets are cooked, it’s time to enjoy them! You can serve them on their own as an appetizer, with a side of cocktail sauce or a garlic aioli. Or, you can add them to a salad for a protein – packed meal. They also go great with pasta or rice.
